A cob oven is a dome of clay, sand and straw built over a sand mould that is then dug out, leaving a cave. Fire a large load of wood inside it, rake out the embers, and the mass holds enough heat to bake bread for hours.
It is made from dirt. It has been the standard village bread oven across Europe for a thousand years. And it does something no other cooking method in this domain does: it bakes properly, in quantity, on one fire.
Why bother
In an emergency, grain and flour are the calorie backbone of any sensible store. The food chapter is built around that. But flour is not food until you can bake, and baking on a stove top or over a fire is difficult, slow and gives poor results.

- It runs on brash. Small wood, hedge trimmings, coppice, offcuts. No need for good logs.
- The materials are free. Subsoil clay, sand, straw, water. If you have a garden, you probably have most of it already.
- Nothing manufactured can fail. No metal to rust, no seals, no fuel supply, no parts.
- It repairs with more mud. Cracks get filled. That is the whole maintenance regime.
It is an outdoor structure, permanent, weighing several hundred kilos, and it takes a weekend plus drying time. This is a summer build, not a crisis response.
The 63% rule
This ratio comes from surveys of hundreds of traditional ovens across Europe, and the convergence is not a coincidence. It is what makes the oven draw.
The mechanism: the oven fires with the door open. Cool air is drawn in through the lower half of the door opening, feeds the fire, and the hot gas and smoke leave through the upper half of the same opening. One aperture, two opposed flows, separated by height.
Get the proportion wrong and the oven does not work:
- Door too tall and the dome fills with cool air. The fire is sluggish, it smokes, and the mass never gets properly hot.
- Door too short and the smoke cannot escape. It rolls back out of the bottom of the door and the fire is starved.
At 63% the two flows balance. This is the single most common reason a home-built oven disappoints, and it is entirely avoidable because it is just arithmetic.
Door width is less critical: roughly half the internal dome diameter is the usual guide.
The layers
An earth oven is four distinct layers and confusing their jobs is the second common failure.

Layers 3 and 4 do opposite jobs and must not be mixed. The thermal shell wants to be dense and heavy so it absorbs and holds heat. The insulation layer wants to be light and full of air so it stops that heat escaping outward. Building one homogeneous mud dome gives you something that is mediocre at both.
The cob mix for the thermal layer: roughly 1 part clay to 2 or 3 parts sharp sand, mixed damp enough to hold together and no wetter. Test it by squeezing a ball: it should hold its shape and not slump, and a dropped ball should flatten without shattering. No straw in this layer, since straw burns out and leaves voids where you want mass.
The insulation mix: clay slip, thin as cream, stirred through a large quantity of sawdust or chopped straw until every fibre is coated but the mix is still mostly fibre. It should feel light.
Building it
- Build the base to a comfortable working height, around 900 mm, from rubble, blocks or a dry stone plinth. Put a layer of insulation, glass bottles bedded in clay or a perlite-clay mix, under the hearth so heat does not drain downward into the base.
- Lay the hearth floor. Fire bricks, or ordinary dense bricks, laid flat and tight on a bed of sharp sand, levelled carefully. This surface must be flat, because you will be sliding loaves onto it in the dark. No mortar; sand-bedded is correct and allows movement.
- Build the sand mould. Damp sand piled on the hearth into a smooth dome, the exact shape of the cavity you want. Measure its height now, because that is your internal dome height and the 63% rule depends on it. A dome roughly as tall as half its diameter is a good starting shape.
- Cover the mould with wet newspaper. This gives you a visible boundary when digging out later so you know when to stop.
- Apply the thermal cob layer, 75 to 100 mm thick, in fist-sized lumps pressed and knitted firmly together. Work from the base upward. Do not smooth the outside yet.
- Cut the door opening while the cob is still soft, to 63% of your measured dome height.
- Let it firm up for a day or two, then dig the sand out through the door. Keep the sand; it can go back into the next mix.
- Let it dry. This is the part people rush. One to three weeks, longer in a British autumn, protected from rain. Small fires can help toward the end but only gently.
- Apply the insulation layer over the dried thermal shell.
- Render, or roof it. A simple lean-to roof is better than any render, because the enemy of an earth oven is rain, not frost.
- Make a door. A slab of hardwood, soaked before each use, cut to fit the opening. It goes in for baking, not for firing.
Firing it
- Build a fire in the centre of the hearth, and light it. Small wood, plenty of it.
- Feed it steadily for one and a half to two hours. You are heating several hundred kilos of mass, not cooking. Do not rush this.
- Push the fire around the floor as it burns, so the whole hearth heats evenly, or build the fire to one side and move it.
- Watch the soot. The inside of the dome will blacken with soot when you start, then, as it reaches temperature, the soot burns off and the dome goes white or clear from the top down. That is the oven telling you it is ready, and it is a far better indicator than any thermometer.
- Rake out the embers into a metal bucket, and sweep the floor with a damp cloth on a stick or a natural-fibre brush.
- Put the soaked wooden door in and let it sit for 15 to 20 minutes so the heat evens out through the mass.
A small oven reaches roughly 350 to 400°C after about two hours of firing with good dry wood. Wet wood will not get you there at all, which is the other reason seasoning firewood matters.
Testing the temperature without a thermometer: throw a small handful of flour onto the hearth. If it chars black in a few seconds, too hot for bread, wait. If it browns in about ten to fifteen seconds, it is right for bread. If it just sits there and slowly colours, the oven is dropping toward biscuit and drying temperatures.
The baking sequence
This is what makes an earth oven efficient: one firing, then everything in descending temperature order as the mass gives up its heat over the following hours.

Planning the whole sequence before you light it is the difference between an oven that is a treat and an oven that is genuinely a fuel strategy. Every stage after the bread is free heat you would otherwise have thrown away.
Looking after it
- Keep the rain off. A roof, or a tarpaulin when not in use. Rain is the only thing that will genuinely destroy an earth oven.
- Fire it occasionally through winter, even briefly, to drive moisture out of the mass.
- Fill cracks with clay slip or fresh cob as they appear.
- Sweep the hearth after each use once cool.
- Do not leave the wooden door in place while stored. It rots, and a damp door against a damp oven holds water in the mouth.
A well-roofed earth oven lasts decades with nothing but occasional mud.
