Build and use a haybox

Boil for a few minutes, then let insulation finish the cooking over hours. Cuts fuel use by most of the total, and has one genuine food-safety rule that is not optional.

A haybox is an insulated box that a boiling pot goes into. The food carries on cooking in its own retained heat for hours, using no further fuel at all.

It is Victorian, it was standard issue in several wartime kitchens, and in a fuel-limited emergency it is probably the single highest-value thing in this domain after the CO page. Dried beans, stew, porridge and grain all cook perfectly in one, and those are exactly the foods a long-term store is built on.

What it is and what it saves

A pot of stew normally simmers for two hours. Almost all of that fuel goes on replacing heat escaping from the pan, not on cooking the food.

Bring it to a rolling boil, hold it there a few minutes, then put the whole pot into thick insulation, and it stays hot enough to keep cooking for hours. The food is done when you open it. Fuel use drops to the initial boil alone, often a fuel saving of 70 to 80% on long-cooking dishes.

The food safety rule

This is the one part of hayboxing that can genuinely make someone ill, and it is easy to get right.

An instant-read thermometer removes all the guesswork and costs very little. If you have one, aim to be above 63°C for the first few hours and reboil regardless.

Building one

Anything that holds a pot with a thick layer of insulation all round it will work. The important part is insulation on every surface, including underneath and on top, and a snug fit.

The simplest version: a cardboard box, a cheap sleeping bag or old duvet, and a cushion. Wrap the pot completely, put a cushion on top, close the box, and put the whole thing somewhere out of draughts. This genuinely works.

A better permanent version:

  1. Take a wooden box, a cool box or a sturdy plastic crate at least 10 cm larger than your pot on every side.
  2. Line the base with at least 5 to 10 cm of insulation.
  3. Nest the insulation around a mould the shape of your pot, so the finished cavity is snug. A pot swimming in a large cavity heats a lot of air instead of staying hot.
  4. Make a thick insulated cushion for the top, at least as thick as the sides. Most heat is lost upward, and a box with beautifully insulated sides and a thin lid is the commonest build fault.
  5. Line the cavity with something wipeable, foil, an old tea towel or a bin liner, because spills are inevitable.

Using it

  1. Prepare and assemble everything in the pot. It will not be stirred again.
  2. Use slightly less liquid than usual. Nothing evaporates in a sealed box, so a normal amount leaves the dish watery.
  3. Bring to a full rolling boil and hold it there for at least 5 minutes. Longer for beans and meat: give beans a good 10 minutes.
  4. Lid on tight, and move the pot to the box immediately. Every minute on the counter is heat you paid fuel for.
  5. Pack the insulation snugly around and over it, close the lid, and leave it.
  6. Do not open it to check. Each opening costs a large fraction of the remaining heat and there is nothing to see.
  7. Reboil before serving.

A bigger pot holds heat much better than a small one, because heat loss scales with surface area and heat content with volume. A haybox works poorly for one portion and beautifully for a family-sized pot. If cooking small amounts, use a smaller, well-fitting cavity or put a filled hot water bottle in beside the pot.

Preheating the box with a pan of boiling water for ten minutes before the real pot goes in noticeably improves performance in a cold house.

The technique that turns a haybox from a nice trick into a fuel strategy.

Cook everything for the day on one fire.

You light a fire once. While it is hot, you boil the beans, boil the stew, boil the porridge for tomorrow morning, and boil the water for drinking and washing. Each pot goes into insulation as it comes off. The fire is then out, and you have a day's food cooking with no further fuel at all.

With two or three boxes, or one large box holding several pots, a single morning fire can produce breakfast, an evening meal and the following day's breakfast. In a fuel-limited winter this is the difference between gathering wood constantly and gathering it occasionally.

It also collapses the number of times you have anything burning, which is worth as much for safety as for fuel. Read carbon monoxide and ventilation for why fewer, shorter burns is the right shape.
