Make pemmican

Equal weights of bone-dry powdered meat and pure rendered fat. Keeps for years at room temperature with no processing, no jars and no power, because there is no water in it for anything to grow in.

Pemmican is dried meat, powdered, mixed with an equal weight of rendered fat. That is the whole recipe. It was the staple travelling food of the North American plains and later of Arctic expeditions, because per kilogram carried it delivers more usable energy than anything else that keeps without refrigeration.

Made properly it keeps for years at room temperature in a bag. Made carelessly it goes rancid or mouldy in weeks, and the difference is entirely about water.

What it actually is

That is genuinely all. No preservatives, no curing salt, no cooking, no jars, no processing. Two shelf-stable ingredients combined into one shelf-stable food.

Why it keeps

The mechanism is water activity, and understanding it is what lets you tell good pemmican from a batch that will spoil.

Bacteria and moulds need available water. Below a certain water activity, nothing grows, regardless of temperature or time. Pemmican gets there in two ways at once:

  1. The meat has essentially no water left. Dried to brittle, it is below the level anything can use.
  2. The fat seals it. Rendered fat contains no water and, once set, forms a matrix around every particle of meat, cutting it off from atmospheric moisture and from oxygen.

So it is not preserved by salt, acid, smoke or heat. It is preserved by the total absence of water, maintained by a fat barrier.

Every failure mode follows from that. Anything that introduces moisture, or leaves moisture in, destroys the mechanism.

The two ingredients

The meat.

Follow the drying method on drying and jerky, including the 71°C heat step, which applies here exactly as it does to jerky. Pemmican is eaten without cooking, so the meat must have been made safe before it was dried.

The fat.

Making it

  1. Dry the meat until it snaps. Let it cool completely.
  2. Powder it. Pestle and mortar, food processor, or the traditional method of pounding between two stones.
  3. Weigh the meat powder.
  4. Melt the same weight of rendered fat gently. Warm enough to be liquid, not hot.
  5. Add any dried berries or salt to the meat powder and mix through.
  6. Pour the melted fat over the powder and mix thoroughly until every particle is coated. It should look like damp sand, not like a soup.
  7. Press it firmly into a tray, or into moulds, or into a sausage skin or clean cloth bag. Press hard: air gaps are where spoilage begins.
  8. Let it set completely somewhere cool.
  9. Cut into bars and wrap.

On the ratio: equal weights is the traditional figure and is the right starting point. Slightly more fat gives a softer bar that binds better and keeps slightly better; slightly less gives a drier, crumblier bar. Do not go far below equal weights, because the fat is doing the sealing as well as providing the calories.

The mistakes that make it spoil

Traditional pemmican contained meat and fat, sometimes berries, and nothing else, for exactly these reasons. The modern habit of adding honey, oats, nuts and seeds makes a pleasant energy bar with a shelf life of weeks, not the thing this page describes.

Eating it

Storage: cool, dark, dry, wrapped. Traditionally a rawhide bag; a paper wrap inside a tin, or a vacuum bag, works well. Avoid airtight plastic in a warm place, where any trace of residual moisture is trapped against the food.

Shelf life: properly made and stored, years. Well-made pemmican kept cool has been reported to remain good for around a decade, and expedition records support the long end of that.

Check it before eating after long storage: it should smell of beef and clean fat. A rancid, crayon-like or sour smell means the fat has oxidised and the batch should be used for something other than food.

How to eat it:
