Root cellaring

Storing a harvest with no fuel, no jars and no processing at all. Two things decide whether it works: matching each crop to the right temperature and humidity, and keeping the ethylene producers well away from everything else.

Root cellaring is not really a technique. It is the absence of one: you put the crop somewhere with the right temperature and humidity, and it stays alive and dormant for months.

No fuel, no jars, no lids, no processing time, no equipment that can fail. For sheer tonnage of food preserved per unit of effort, nothing else in this domain is close, and it is what British households actually did with a harvest before freezers.

Why this beats every other method for bulk

The limitation is equally clear: it only works for crops that store, only through the cold months, and only if you have somewhere with the right conditions.

The ethylene problem

This is the single thing that ruins more home stores than any other, and most people have never heard of it.

Ripening fruit gives off ethylene gas. Ethylene is a plant hormone that signals ripening and ageing, and it works on other plants nearby, not just the one producing it. A box of apples in the corner of a cellar is quietly telling everything else in the room to ripen, sprout and age.

In practice: apples in a separate room, a separate outbuilding, or at minimum the far end of a well-ventilated cellar with the vegetables at the other. If you only take one thing from this page, take this one.

The four storage conditions

Crops fall into four groups, and putting a crop in the wrong one is the second commonest failure.

Potatoes are the crop people get wrong most often. They want cool, not cold: 4 to 10°C. Below about 4°C the starch begins converting to sugar, which makes them sweet, discoloured and prone to darkening badly when fried. That change is partly reversible by bringing them back to room temperature for a couple of weeks, but the simpler answer is not to store them too cold in the first place.

Potatoes must also be kept in complete darkness. Light turns them green, and green means solanine, which is genuinely toxic and bitter. Hessian sacks, thick paper sacks or a covered box, never clear plastic.

Squash and pumpkin are the opposite of everything else here: they want it warm and dry, and a cellar will rot them. The airing cupboard, a spare bedroom or a shelf in a warm dry room is right.

Leaving crops in the ground is the most underrated option in a British winter. Parsnips, leeks, swede, kale and Brussels sprouts all overwinter perfectly well in the ground under a straw or leaf mulch, and parsnips genuinely improve after a frost. It costs nothing, needs no space, and the only risks are slugs, rodents and ground too frozen to lift.

Curing, which comes first

Several crops need a curing period before storage. Skipping it is why a store fails in November rather than March.

Carrots, parsnips, beetroot and other roots need no curing and go straight into damp storage.

Handle everything as if it were eggs. A bruise or a cut is where rot starts, and one damaged potato in a sack will take a dozen with it. Lift carefully, do not drop into buckets, and set anything damaged aside to eat first.

Never store anything washed. Brush soil off when dry, and leave the rest. Washing removes the natural surface protection and drives moisture into any small wound.

Making a store without a cellar

Almost nobody has a proper cellar. These all work.

Ventilation matters more than insulation. A store needs air movement to carry away the moisture and the carbon dioxide the crop is still producing, because these vegetables are alive and respiring. A sealed box rots.

Managing it through the winter

A well-run store gets a British household from October to March on its own produce, which is the whole point of the exercise.
