Smoke does three things to food: it deposits antimicrobial compounds on the surface, it dries the outer layer, and it tastes extraordinary. What it does not do is preserve food on its own, and that misunderstanding is where the danger sits.
The distinction that matters
These are not two settings of the same process. They are different operations with different safety requirements, and treating one like the other is the failure mode.
Hot smoking
Cooking with smoke. The food reaches a safe internal temperature during the process, which is what makes it forgiving.
- Bring the food to smoking temperature gradually, 60 to 120°C.
- Smoke until it reaches a safe core temperature. Use a probe thermometer: 75°C for poultry, 63°C plus a rest for whole cuts of pork and beef, 63°C for fish.
- The colour of the meat is not the test. Smoked meat develops a pink ring near the surface from the smoke chemistry itself, and it persists whatever the internal temperature. Judging doneness by colour on smoked food is unreliable in a way it is not on roasted food.
Hot smoking is where anyone new to this should start. The safety margin is wide, the results are immediate, and the food is genuinely ready to eat at the end. It is also the technique that works with the equipment most households already have: a kettle barbecue with the coals to one side, a lidded pan with a rack, or a simple stovetop smoker.
Hot smoked food is cooked food. It keeps like cooked food, days in a fridge, and is not shelf stable.
Cold smoking, and its real risk
If you are going to do it:
- Cure first. Follow curing meat, with Cure #1, weighed to 0.1 g. This is not the optional step.
- Form the pellicle. See below.
- Keep the chamber below 30°C, measured, not assumed. This means a British winter, early morning, or a cold smoke generator well separated from the chamber.
- Keep it short. Hours for fish, not days, unless you know exactly what you are doing.
- Refrigerate immediately afterwards.
- Understand what you have made. Cold-smoked bacon is raw and must be cooked. Cold-smoked salmon is raw and is safe only because the cure made it so.
Building a cold smoker
The essential requirement is smoke without heat, which means separating the fire from the food.
The simplest approach that works: a cold smoke generator. A maze or spiral tray of compressed sawdust or wood pellets, lit at one corner, which smoulders slowly for 8 to 12 hours producing smoke and almost no heat. Put it in the bottom of any enclosed box, cabinet or old barbecue with the food above and vents at top and bottom. This is how most people should do it: cheap, reliable, and it cannot overheat the chamber.
The traditional approach: a firebox several metres away, connected to the smoking chamber by a buried pipe or trench. The distance and the ground cool the smoke on the way. More work, and it handles larger quantities.
Both need:
- A vent at the top, or the chamber fills with stale smoke, condensation and creosote, which tastes acrid and bitter.
- A thermometer in the chamber, at food height. Not a guess.
- Food hung or racked with space around it so smoke reaches every surface.
Wood
Use hardwood, unseasoned by preference for smoking, from a known source.
Good: oak (the British standard, especially for fish), beech, apple, cherry, plum, alder (traditional for salmon), hazel, birch. Whisky barrel chips if you can get them.
Smoke quality matters as much as wood species. You want thin blue smoke, almost invisible. Thick white or yellow billowing smoke means incomplete combustion and deposits acrid, bitter creosote on the food. If the smoke is thick and white, the fire needs more air.
The pellicle
The step that most home smokers skip and then wonder why the smoke flavour is weak and patchy.
After curing and rinsing, leave the food uncovered in the fridge, or in front of a fan in a cool place, for 4 to 24 hours until the surface is dry and tacky to the touch, with a slight sheen.
That tacky layer is the pellicle, and smoke compounds adhere to it. Smoke does not stick to a wet surface: it condenses in the water on the outside and runs off, taking the flavour with it and leaving a patchy, streaky result.
Dry surface, even smoke. It is that simple and it is worth the day.
Storage after smoking
Smoking alone does not make food shelf stable, whatever the tradition suggests. Traditional smoked foods that kept for months were heavily salted, heavily smoked and heavily dried, and by modern standards nearly inedible without soaking.

Vacuum packing cold smoked food is the case that needs most care. Removing the oxygen removes competition from spoilage organisms that would otherwise warn you something is wrong, while leaving the anaerobic ones perfectly comfortable. Vacuum-packed cold-smoked fish held above fridge temperature is a documented botulism route, which is why commercial products of that kind are always cured with nitrite and always carry a refrigeration instruction.
If you are unsure what you have made, cook it. Hot smoking is the forgiving process for good reason.
