Sprouting is presented in almost every preparedness book as the perfect solution to winter: fresh living food in three days, from a jar on the worktop, using stored seed, with no soil, no light, no garden and no fuel. Vitamin C, folate and enzymes, in February, from a cupboard.
All of that is true. What is usually left out is that sprouts are one of the highest-risk foods there is, and that growing them at home does not fix it.
Why this page is not what you expected
That does not mean do not sprout. It means sprout with your eyes open, treat the output as a raw agricultural product rather than a salad ingredient, and cook it.
Why sprouts are different from other fresh food
Ordinary vegetables can carry contamination on the surface, where washing removes most of it and where the numbers do not increase in your kitchen.
Sprouts differ on both counts. The contamination can be inside the seed, and the growing process amplifies it enormously in your own home over three days at room temperature.
That combination is why food safety authorities single sprouts out and why they have caused repeated large outbreaks internationally, including one of the deadliest foodborne outbreaks in modern European history, traced to fenugreek sprout seed.
Who should not eat raw sprouts at all, per standard guidance: young children, anyone over 65, anyone pregnant, and anyone immunocompromised. In a household with a four-year-old, that alone settles the question: cook them.
Reducing the risk
You cannot eliminate it. You can reduce it substantially.
- Buy seed sold specifically for sprouting, from a supplier who tests for pathogens. This is by far the biggest lever, because the seed is the main source. Do not sprout seed sold for planting: it is frequently treated with fungicide and is not tested for pathogens.
- Never sprout seed of unknown origin, including bird seed, animal feed, or anything from an unlabelled bulk bin.
- Cook them. Thoroughly, to the temperature you would use for any other raw ingredient. Stir-fried, in soup, in a curry. This is the only step that reliably deals with the hazard, and cooked sprouts still carry most of the nutritional benefit that made them attractive.
- Scrupulous equipment hygiene. Jars, lids, mesh and hands, washed in hot soapy water before every batch. This does not address contaminated seed but it prevents adding to it.
- Rinse two or three times a day with clean cool water. This is for keeping the sprouts fresh and washing away metabolic waste. It is not a safety measure and should not be relied on as one.
- Keep it cool. Sprout at room temperature or below, never in an airing cupboard. Warmer is faster for the sprouts and much faster for the bacteria.
- Refrigerate as soon as they are ready, and eat within a few days.
- Discard any batch that smells off, feels slimy, or shows visible mould. Do not rinse and rescue.
How to sprout
The process itself is simple and needs almost nothing.
What you need: a wide-mouth jar, a piece of muslin or fine mesh and a rubber band, or a purpose-made sprouting lid.
- Rinse the seed, then put 1 to 3 tablespoons in the jar. They expand enormously, so use far less than looks right.
- Soak in cool water, 4 to 12 hours depending on the seed. Overnight suits most.
- Drain completely, then rinse and drain again. Standing water is the commonest cause of a failed slimy batch.
- Lay the jar on its side at an angle, mouth down, so it continues to drain. A dish rack works well.
- Rinse and drain 2 to 3 times a day, in cool water, draining thoroughly each time.
- Keep out of direct sunlight, at room temperature or cooler.
- Ready in 2 to 6 days depending on the seed.
- Optionally green them for a few hours in indirect light at the end, which develops chlorophyll.
- Rinse, drain very well, refrigerate, and cook before eating.

The safer alternatives
If the objective is fresh green food in a British winter, sprouts are not the only answer and are not the safest.
- Microgreens grown in a tray of compost on a windowsill. Cut above the soil line, so the seed and its contamination stay behind. Meaningfully lower risk than sprouts and only a few days slower.
- Windowsill herbs: parsley, coriander, chives, all year round.
- Winter salad leaves under a cloche or in a cold frame. Lamb's lettuce, winter purslane, land cress and mizuna all crop through a British winter outdoors.
- Overwintered brassicas. Kale, chard and perpetual spinach stand through the cold and are the traditional British answer to exactly this problem.
- Stored roots, which retain useful vitamin C for months. See root cellaring.
- Sauerkraut and other ferments, which keep vitamin C well and carry none of this risk. See fermenting vegetables. For a household wanting fresh, living, vitamin-rich food through winter with no fuel, this is the better answer and it is not close.
Microgreens are the recommendation if you want the sprouting concept without the sprouting risk: same speed, same cupboard, same seed packet, and the contaminated seed coat is left in the tray rather than eaten.
